suisse is both the adjective (Swiss) and the noun (un/une Suisse — a Swiss person). It is written with a lowercase -s as an adjective but uppercase as a noun referring to a person. Le fromage suisse and la Suisse romande (French-speaking Switzerland) are common collocations. The idiom boire en suisse means to drink (or do something) alone, on the sly, without sharing.
