Usage Note

Fraiser has two quite different technical meanings: in metalwork and carpentry it means to countersink or ream a hole using a fraise (drill bit/milling cutter), and in cooking it means to work pastry dough by smearing it across the surface with the heel of the hand. The cooking technique fraiser la pâte (also spelt fraser) is a classic French method for blending shortcrust pastry without making it elastic.
