Usage Note

Cannelle is the spice derived from the inner bark of Cinnamomum trees. In French cooking it appears in both sweet dishes (tarte aux pommes à la cannelle) and some savory Moroccan-influenced dishes (tajine). The word also describes the pale brownish-tan colour of cinnamon sticks.
