Brûlé is the past participle of brûler (to burn) used as an adjective. Sentir le brûlé means to smell something burning. Un cerveau brûlé or être brûlé can mean burned out or exposed (as a spy who has been compromised). Crème brûlée is the classic French dessert with a caramelised (brûlée) sugar top.
