Usage Note

La plonge is kitchen slang for the dishwashing area in a professional kitchen, and by extension the job of washing up: faire la plonge means to wash dishes (as a job). The person who does it is le plongeur / la plongeuse. It is a distinctly French-restaurant-world term unfamiliar to most learners of everyday French.
