Dorer in cooking means to brown or give a golden colour to food (faire dorer — to brown in a pan), and in a broader sense it means to gild or coat with gold. The kitchen instruction dorer au beurre (to brown in butter) is very common in French recipes. The related adjective doré(e) (golden) is frequently used to describe a golden crust.
