Carotte is feminine, so it is une carotte. The plural carottes is regular. The informal expression les carottes sont cuites ('the carrots are cooked') is a fixed idiom meaning 'it's all over' or 'the game is up'. A carrot-top (redheaded person) is colloquially called a rouquin or poil de carotte.
